Chocolate truffles by Louis

Ingredients:

  • 4 ounces black chocolate broken into pieces

  • 3 tbsp water
  • 4 tsp icing sugar

  • 2 tbs butter

  • 2 egg yolks

  • 2 tsp brandy

  • bitter-tasting cocoa

 

First, melt the chocolate with the water in a small saucepan over a low heat until the chocolate has just melted.

Second, add the butter and the icing sugar.

Third, work together until the sugar is melt.

Fourth, add the egg yolks, one after the other.

Fifth, work together with the brandy.

Sixth, store in a cool place but not in the fridge.

Seventh, spoon truffles as big as nuts.

Finally, roll them in bitter-tasting cocoa.
